Mackinac Island Fudge

INGREDIENTS :
  • ½ cup granulated white sugar
  • ½ cup brown sugar, firmly packed
  • 8 tablespoons unsalted butter
  • ½ cup milk
  • Pinch of salt
  • ½ cup unsweetened cocoa powder
  • 2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract

INSTRUCTIONS :
  1. Mix butter, milk, salt, Brown and white sugar in a heavy saucepan over medium heat. Bring to a boil and stir constantly 1 minute.
  2. Remove from heat and cool briefly, then add the vanilla, cocoa powder and sugar candied ' s. beat with mixer until fudge is smooth and thick.
  3. Pour into buttered baking dish. When cool enough to touch, use a spatula to help roll mixture into the shape of a log, wrap in plastic wrap and place in the freezer for 20 minutes.
